Breakfast is the most important meal of the day, and we never ever miss it. One of our go-to breakfasts is dairy-free yogurt, berries and granola for several reasons: it’s easy, delicious, and healthy. We’re self-declared granola connoisseurs around here, and we think this Golden Granola recipe is one of the best we’ve had in recent memory. It’s a little sweet, a little savory, perfectly crunchy, and 100% delicious. This recipe makes a hefty batch which you can store in an airtight container for up to two weeks, so you’ll have plenty on hand to snack on. Trust us, though, if you bring the batch to the office or leave it out for others to eat, it’ll be gone before you know it. Luckily it’s easy, because you may need to get started on the second batch as soon as you’re done with the first.
Golden Granola
3 cups rolled oats
1/2 cup coconut sugar
1/2 cup maple syrup
1/2 cup raw slivered almonds
1 cup unsweetened coconut flakes
1/4 cup flax seeds
1/2 cup golden raisins
1/2 cup olive oil
1 tsp flaky salk
1/2 tsp nutmeg
dash of cinnamon
- Preheat the oven to 300 degrees.
- Combine rolled oats, coconut sugar, maple syrup, slivered almonds, coconut flakes, flax seeds, olive oil, salt, nutmeg in a large mixing bowl.
- Once combined, line a large baking sheet with parchment paper and spread the mixture evenly.
- Place the baking sheet in the oven for 35 minutes. Toss granola every 10 minutes.
- Add golden raisins, stir into mixture, and bake for another 10 minutes.
- Let the granola cool. Once cooled, add a dash of cinnamon over the granola (optional).
