Spicy Olive Mocktail

INGREDIENTS:
1 oz olive brine
1 lemon
Sparkling water
1/2 cup sugar
1 cup water
1 jalapeño (sliced)
Tajin (for garnish)
Olives (for garnish)
Drizzle of olive oil
Instruction:
- Make the Jalepeño Simple Syrup. Add the sugar, water, and jalapeño slices to a saucepan and bring to medium heat. Stir until sugar is dissolved and jalapeño is soft. Mash jalapeños to release their spice and reduce the heat to low and simmer for 8-10 minutes. Allow to cool and double strain into an airtight container. Store in the fridge.
- Prep your Pour. Cut the lemon in half and use it to moisten the rim of your glass. Dip the lemony rim into Tajin until it sticks.
- Serve and enjoy! Pour ⅓ cup jalapeño simple syrup into a cocktail glass with ice. Add 1 oz. olive brine and the juice of 1 lemon. Top with sparkling water and a drizzle of olive oil. Garnish with olives or a twist of lemon peel. Cheers! xx
