Recipe: Lavender Lemonade

A simple and refreshing drink that’s perfect for warm weather or anytime you need a pick-me-up. By following these easy instructions, you can enjoy a sweet, tart, and subtly floral drink that’s sure to please. Enjoy!

Lavender Lemonade

INGREDIENTS:

- 1 small handful freshly picked and rinsed lavender flowers, or 1 tbs. dried flowers

- 1 ¾ cups white sugar

- 2 cup boiling water

- 9 medium lemons, or more as needed

- 7 cups ice-cold water

- ice as needed

- thinly sliced lemons and a few lavender sprigs, for optional garnish

Instruction:
  • start by cutting the lavender flowers from the stems, leaving the flower buds intact. Place them in a medium-sized bowl (one that can withstand boiling water).
  • next, pour the sugar over the flowers followed by 2 cups of boiling water. Stir with a spoon until the sugar has melted. Cover the bowl and let the mixture steep for 30 minutes to several hours, depending on how strong you want the lavender flavor to be.
  • after the infusion period is over, strain the flowers out using a fine mesh strainer or cheesecloth.
  • gently roll the lemons on your counter to soften them up. Cut each lemon in half lengthwise, then squeeze the juice into a liquid measuring cup. Add the pulp to the juice, but discard any seeds. Keep juicing until you have 1 1/2 cups of fresh juice and pulp.
  • pour 7 cups of ice-cold water into a pitcher. Add the lemon juice and pulp to the pitcher and stir well.
  • add the lavender syrup to taste, starting with a little and adding more as needed.Finally, add ice to the pitcher to chill the lemonade and make it even more refreshing and enjoy!
