Tinned Fish Crostinis with Garlic Herb Butter
1 Baguette
Tinned fish of choice
2 cups heavy cream
½ tablespoon minced garlic
¼ tablespoon finely chopped rosemary
¼ tablespoon finely chopped dill
¼ tablespoon finely chopped thyme
Juice of 2 lemons
Drizzle of olive oil
Pinch of flaky salt
Pour 2 cups heavy cream into a stand mixer and beat on low speed until it thickens. Gradually increase the speed of the mixer until the cream has separated into butter and buttermilk.
Remove butter from the mixer and squeeze out excess moisture. Rinse quickly under cold water and place into a new mixing bowl.
Mix minced garlic and herbs into the butter using a baking spatula.
Cut a baguette into 1 inch thick slices, drizzle with olive oil, and toast in the oven at 400 degrees until golden brown.
Spread 1 to 2 tablespoons of butter onto each crostini. Top with tinned fish, a drizzle of olive oil, a squeeze of lemon, and sprinkle with flaky salt.
