Grilled Caesar Salad
1 garlic clove
2 tablespoons lemon juice
1 tablespoon anchovy paste
1 egg yolk
1 cup olive oil
1 cup parmesan cheese
ground pepper
pinch of salt
Make the dressing.
Using a mortar and pestle, grind the the garlic clove with a pinch of salt until a fine paste forms. Add the egg yolk, anchovy paste, and whisk until combined.
Add the lemon juice and ¼ cup of olive oil, whisking again until combined. Slowly add in the parmesan and olive oil, whisking to emulsify as you go. You can also use an immersion blender. Finish with ground pepper.
Assemble the salad.
Pre-heat a grill on high. Wash and dry the little gem lettuce, halving pieces lengthwise. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat.
Place gem halves on grill, cut side down, for about 3 minutes until you reach desired char.
Serve and enjoy!
Toss grilled gem halves in dressing to taste. Serve it up in your favorite serving dish, topped with some extra parmesan cheese.
Summer Melon Salad
1 melon
basil
1/2 lime
olive oil
aleppo pepper
flaky salt
Prep your ingredients.
Cut the melon in half and scoop out the seeds. Using a spoon, scoop out the flesh of the melon into bite-sized pieces and place into a shallow serving bowl.
Assemble and enjoy!
Drizzle the melon with olive oil and lime juice. Top with fresh basil, aleppo pepper, and flaky salt to taste. Enjoy! xx
Summer Squash Blossom Pizza
pizza dough (homemade or store-bought works!)
cherry tomatoes
garlic
1 can of tomatoes (crushed and seasoned with salt)
basil
squash blossoms
flaky salt
stracciatella
parmigiano reggiano
sopressata
Prep your ‘za!
Preheat your oven to 500F (or 800F for pizza ovens). Slice a handful of cherry tomatoes in half and put in a bowl. Mix in crushed garlic, a flaky sea salt, and a drizzle of olive oil. Set aside to marinate.
Assemble your ingredients.
Stretch your pizza dough into a circular shape and top with tomato sauce, sopressata, basil, and squash blossoms.
Bake and enjoy!
Bake the pizza until the crust has reached it’s desired crispiness (about 8-10 minutes). Once the ‘za is out of the oven, top with with stracciatella, parmigiano reggiano, and flakey salt. Enjoy! xx
Arnold Palmer
3 cups water
1 1/3 cup granulated sugar
1/2 cup freshly squeezed lemon juice
1 sliced lemon
pinch of salt
1 black tea bag
1 cup mint leaves & extra for garnish
Make a cup of tea.
Boil 1 cup of water over medium heat. Pour hot water into a mug and add 1 black tea bag. Place mug in fridge to cool.
Make the minty simple syrup!
Add 1 cup of water, 1 cup of sugar, and 1 cup of mint leaves to a pot over medium heat. Heat until all sugar is dissolved and consistency is syrupy. Strain mint leaves and set simple syrup aside.
Make the lemonade.
Combine 1 cup of water, 1/3 cup granulated sugar, 1/2 cup of freshly squeezed lemon juice, and a pinch of salt. Mix until sugar is dissolved.
Mix and enjoy!
Combine cooled tea, lemonade, and 30 ml of mint simple syrup over ice. Garnish with sliced lemon and a fresh mint sprig and enjoy! xx
Lavender Lemon Drop
1/2 cup water
1/2 cup sugar
1/2 tablespoon fresh lavender blossoms
3 oz. fresh lemon juice
3 oz. vodka
ice
lemon slices
lavender sprigs for garnish
Make the lavender simple syrup.
Combine lavender, sugar, and water in a saucepan, warming over medium heat. Stir until the sugar is dissolved. Allow to cool and transfer to an airtight container. Store in the fridge.
Mix and enjoy!
Fill cocktail shaker with ice. Add lemon juice, simple syrup, and vodka. Shake vigorously for 30 seconds. Strain the cocktail into two chilled coups and garnish with a lemon slice and fresh lavender sprigs. Cheers! xx
Blackberry Popsicles
16 ounces frozen blackberries
1 1/2 cup water
1 cup sugar
Prep your popsicles.
Combine water and sugar over medium heat. Boil for about one minute, or until all sugar is dissolved. Remove from heat and set aside.
Muddle or blend fresh blackberries. Add cooled simple syrup and mix until combined. Pour liquid into popsicle molds.
Freeze & Enjoy!
Top with a few fresh berries and mint leaves before placing into the freezer for a few hours or overnight. Best enjoyed on a warm summer day! xx
