Mocktail Monday: Spiced Chai Toddy

Spicy-sweet gingerbread simple syrup, warming chai tea, and a creamy splash of milk make this Spiced Chai Toddy a cozy season staple. Read on to get the recipe and happy sipping!

Spiced Chai Toddy

INGREDIENTS:

1 cup water

1/4 cup brown sugar

1/2 tablespoon vanilla extract

1 teaspoon ginger

1 tablespoon molasses

1/4 teaspoon cinnamon

1 cup milk of choice

2 bags chai tea

Instruction:

Make the Ginger Simple Syrup

Add the water, brown sugar, vanilla extract, ginger, molasses, and cinnamon into a saucepan over medium heat. Stir until combined and all ingredients are dissolved. Allow to cool and transfer to an airtight container. Store in the fridge.

Time for Chai!

Bring 1 cup of milk to a simmer over medium heat. Add chai tea bags and steep covered for 5-10 minutes, depending on desired strength. Discard the tea bags. Pour tea into mugs and add 1 tablespoon of the gingerbread syrup to each cup. Stir. Garnish with star anise and cinnamon and enjoy!
