Serve: 2-4

2 little gems lettuce

1 head of butter or an heirloom lettuce

2 handfuls of nasturtium greens

Nasturtium flowers (for garnish)

For the Dressing:

1/2 shallot, finely chopped

1 garlic clove, finely grated

1 teaspoon agave

2 tablespoons of champagne or sherry vinegar

  2. Add the grated garlic, agave, olive oil, salt, and pepper to the bowl. Whisk the dressing until well combined.
  3. Wash the greens thoroughly and use a salad spinner to remove the excess water.
  4. In a large bowl, layer the little gems lettuce followed by the butter or heirloom lettuce.
  5. Top the lettuce with the nasturtium greens.
  6. Garnish the salad with nasturtium flowers.
