Recipe: Garden Nasturtium Salad
This Garden Nasturtium Salad is a beautiful and flavorful salad, using ingredients (which are easy to grow) from your garden. Nasturtium greens have a peppery flavor like arugula and a subtle sweetness. The edible nasturtium flowers also provide a vibrant pop of color to the plating!

Garden Nasturtium Salad
2 little gems lettuce
1 head of butter or an heirloom lettuce
2 handfuls of nasturtium greens
Nasturtium flowers (for garnish)
For the Dressing:
1/2 shallot, finely chopped
1 garlic clove, finely grated
1 teaspoon agave
2 tablespoons of champagne or sherry vinegar
1/4 cup of good olive oil
- Pinch of salt and pepper, to taste
- In a bowl, combine the finely chopped shallot and vinegar. Let it sit for 10 minutes.
- Add the grated garlic, agave, olive oil, salt, and pepper to the bowl. Whisk the dressing until well combined.
- Wash the greens thoroughly and use a salad spinner to remove the excess water.
- In a large bowl, layer the little gems lettuce followed by the butter or heirloom lettuce.
- Top the lettuce with the nasturtium greens.
- Garnish the salad with nasturtium flowers.
- Just before serving, drizzle the dressing over the salad. Toss gently to coat the greens.
- Serve the Garden Nasturtium Salad immediately.
